Sookha Kala Chana Recipe – A Protein-Packed, Flavorful Indian Snack

Ingredients 

For Sookhe Kale Chane
  • Desi Chickpea - 1 cup (200 grams)
  • Coriander Powder - 1 tbsp
  • Kashmiri Red Chilli - 1/2 tsp
  • Turmeric Powder - 1/4 tsp
  • Dry Mango Powder - 1 tsp
  • Oil - 2 tbsp
  • Cumin Seeds - 1 tsp
  • Ginger Julienne - 1 tsp, 
  • Green Chilli - 2-3 cut lengthwise
  • Salt - 1 tsp
  • Black pepper- 1/4 tsp
  • Garam Masala - 1/2 tsp
  • Coriander Leaves

Method:


  1. Wash the kala chana and soak in enough water for 6-8 hours.
  2. Drain the water and add the kala chana to a pressure cooker. 
  3. Add 1 cup of water and 1 teaspoon salt to the pressure cooker and cook the chana until done. I cooked for one whistle on high heat, then reduced the heat to low for 10 minutes.
  4. Remove the pressure cooker from heat and let the pressure release.
  5. Heat oil in a pan, once the oil is hot, add cumin seeds and let it crackle.
  6. Add Green chilli and ginger and saute them for a minute.
  7. Add coriander powder, Kashmiri red chilli powder, turmeric powder,  and fry for a few seconds.
  8. Add chana along with the water in the pan and add salt to taste, garam masala, black pepper powder, and dry mango powder(Amchoor powder) and mix them well.
  9. Cook on medium heat for 3-4 minutes or until all the water is absorbed.
  10. Garnish with fresh coriander. Serve hot with sooji ka halwa and poori or aloo sabzi.
