Whether you serve it chilled or warm, Kesar Mawa Rabri never fails to impress!

ingredients for Kesar Mawa Rabri

To make this delicious dessert, you will need:

  • 1 liter full-fat milk
  • 100 grams khoya (mawa)
  • A pinch of saffron (kesar)
  • ¼ cup sugar (adjust to taste)
  • ½ teaspoon cardamom powder
  • 2 tablespoons chopped almonds and pistachios for garnish

How to Make Kesar Mawa Rabri | Step-by-Step Guide

     Heat the Milk

Start by boiling 1 litre of full-fat milk in a heavy-bottomed pan. Once it comes to a boil, lower the heat and let the milk simmer, stirring occasionally.  Add a pinch of saffron strands to the boiling Rabri mixture. The saffron will give the Rabri a beautiful golden colour and a subtle flavour.

    Add Khoya (Mawa)

Once the milk is reduced to half, add crumbled khoya (mawa). Stir continuously to dissolve the khoya and thicken the mixture further.

    Sweeten and Flavor

Add sugar and cardamom powder to the thickened milk mixture. Stir until the sugar dissolves completely. Let the Rabri cook for another 5-7 minutes on low heat.

    Garnish and Serve

Turn off the heat and let the Rabri cool slightly. Garnish with chopped almonds and pistachios. Serve warm or chilled, as per your taste.
